Ingredients:
- 1 Snapdragon Chicken Ramen
- 2 strips thick pancetta or guanciale
- 1 egg
- 1 egg yolk
- 1 cup parmesan or pecorino cheese, grated, plus more for garnish
- 1 tsp freshly ground black pepper, plus more for garnish
Directions:
- Slice the bacon into little cubes and cook on medium low until brown and crispy. Set aside pan with the bacon and the bacon fat.
- In a medium bowl, combine the egg, egg yolk, grated parmesan, and ground black pepper. Stir everything together.
- Cook Snapdragon ramen according to instructions. When the noodles are done, pour as much water out as you can and put it into the bowl with the egg-cheese mixture.
- Immediately toss and mix the noodles in the sauce to thicken sauce and coat each noodle.
- Add in crispy bacon and stir until combined
- Serve immediately, and garnish with some more grated parmesan and ground black pepper on top.
