• 1 Snapdragon Chicken Ramen
  • 2 strips thick pancetta or guanciale
  • 1 egg
  • 1 egg yolk
  • 1 cup parmesan or pecorino cheese, grated, plus more for garnish
  • 1 tsp freshly ground black pepper, plus more for garnish


  1. Slice the bacon into little cubes and cook on medium low until brown and crispy. Set aside pan with the bacon and the bacon fat.
  2. In a medium bowl, combine the egg, egg yolk, grated parmesan, and ground black pepper. Stir everything together.
  3. Cook Snapdragon ramen according to instructions. When the noodles are done, pour as much water out as you can and put it into the bowl with the egg-cheese mixture.
  4. Immediately toss and mix the noodles in the sauce to thicken sauce and coat each noodle.
  5. Add in crispy bacon and stir until combined
  6. Serve immediately, and garnish with some more grated parmesan and ground black pepper on top.
